A Spicy Evening with Chef Amadeus

October 1st, 2010 by Camy

Last Monday Chef Amadeus rocked it for the residents of Aspira.  He is a delightfully entertaining man and quite the entrepreneur.  The evening started with an aromatic sofrito style vegetable medley served on top of a wedge of brie.  The veggies were sauteed and made the cheese all melty and delicious.  Next came the curried shrimp salad with a mango vinaigrette.  The shrimp were served warm and were a very nice contrast to the cool, crisp salad greens.  The peas and rice were a precursor to my favorite dish of the night – the jerk chicken drumsticks.  They were superb - slightly sweet and tangy and not too messy!  The evening ended with halved strawberries topped with cream cheese.  They were then sprinkled with Amadeus’ very own ’Christmas Morning’ spice – did I mention he has his own salt free line of spices?  He does.
